5 Minute Allergy Friendly Mug Cinnamon Roll (dairy free, egg free, gluten free)
Dough
½ large banana
6 Tbsp flour + more if needed (I used plantain flour) https://amzn.to/3YWzD05
1 tsp baking soda
Filling
2 Tbs water (or almond milk or coconut milk) (may need more, add slowly)
1-2 Tbsp of maple sugar https://amzn.to/3EC4fvI
1 tsp cinnamon
Caramel Sauce
1Tbsp maple syrup https://amzn.to/3ZfNMW3
½ tsp cinnamon
OR
1 Tbsp coconut sugar
1 Tbsp coconut milk cream
Icing
1 Tbsp Palm shortening
1-2 Tbsp maple sugar
Mix mashed banana, flour, and baking soda together. In a separate bowl, mix water/milk, maple sugar and cinnamon together. Roll out the dough and brush some olive oil on the inside of the dough. Spread on the filling of maple sugar and cinnamon. Roll up and cut into slices. Place slices in mug. Mix the caramel sauce ingredients together and pour over the slices in the mug. Microwave for about 90 seconds or until done. Let cool and put icing on top.
