Cassava Cinnamon Rolls (dairy free, gluten free, egg free)
Cinnamon Rolls
2 cups sweet potato OR butternut squash cooked and pureed

2 Tbsp cinnamon
¼ cup maple sugar https://amzn.to/3EC4fvI
1 tsp salt
1 tsp vanilla
¼ cup palm oil shortening https://amzn.to/3xNmMSf
1 tsp baking soda
Cook and puree the butternut squash (or sweet potato depending on which you use). Mix butternut squash, cassava flour, baking soda, and salt together. Mix cinnamon, maple sugar, vanilla, and melted palm shortening together. Roll out dough and spread filling on the dough. Roll up and cut into slices. Cool on 375F for 30-35 minutes.
