Chickpea Flour Muffins (gluten free, dairy free, egg free muffins, allergy friendly)

Have lots of food sensitivities/allergies like me and want a sweet treat? I have the solution for you! Chocolate chickpea flour muffins. I have not had regular flour, eggs, or sugar in almost 3 years. I have not had a regular cupcake or muffin in that long either. I have had to get really creative with my cooking and baking recently. This is not a regular muffin so if you are expecting a Pillsbury muffin mix, this is not going to be the same! But if you are like me and can't have gluten, dairy or eggs, this is just the thing for you!

1 cup chickpea flour

1 tsp baking soda

1/2 tsp salt

1/4 cup coco powder

1 tps cinnamon

1/2 tsp of Pure brand powdered stevia (or your choice of sweetener to taste)

2 Tbs melted coconut oil

2 Tbs ground flax seed (mix separately in 2 Tbs of water and let sit together for about 5 minutes)

1/2 cup of full fat coconut milk (mix separately with the 2 Tbs of ACV and let sit for about 5 minutes. This will form a thick mixture similar to buttermilk)

2 Tbs of apple cider vinegar

1/4 cup of nut butter of choice

1/4 cup of water (or milk of choice- add slowly at the end)

Preheat your oven to 350F while you prepare your ingredients. Oil your mini muffin pan. Mix all dry ingredients in a bowl. After letting your flax seeds and water sit and your coconut milk and ACV sit, mix in your wet ingredients into your dry ingredients. Wait to add in the extra 1/4 cup of water/milk until all other ingredients are added. Add in the extra water/milk slowly until it is a cake batter consistency. Cook in the oven for 10 minutes or until done.

For sweetener, I use the Pure brand of stevia that is pure organic stevia without any additives.

These muffins have a good bread like consistency and they fluff even though they do not have eggs! The baking soda, ACV, and flax seed combination is the perfect combination to create a bread like consistency! You can add in nuts, seeds, coconut flakes, raisins, or chocolate chips to this recipe to make it extra special if you like! I hope you enjoy!
