Chickpea Fritters (gluten free, dairy free, egg free)
1 can chickpeas
¼ plantain flour
½ tsp salt
1 Tbsp smoked paprika
¼ tsp red pepper flakes
2 Tbsp olive oil (for frying)
2 Tbsp water
Optional: ½ tsp garlic powder, 1 tsp parsley, ¼ tsp black pepper, ¼ cup parmesan cheese (use seasonings that you enjoy)
Mash chickpeas. Add all ingredients and mix together (I used smoked paprika, red pepper flakes and salt to season mine). Use a jelly jar lid and pat out into patties. Fry till golden
