No Refined Sugar Maple Marshmallows
1 cup water

2 tsp vanilla
Pour ½ cup of warm water into the bowl of a stand mixer. Add gelatin and whisk slightly. Turn off and set aside. Pour the other ½ cup of water into a small saucepan along with 1 cup of maple syrup (and cocoa powder if using). Slowly bring mixture to a boil. If you have a kitchen thermometer, you want it to reach 240F. If you do not have a kitchen thermometer, just keep boiling and stirring constantly for 8 minutes. Turn on mixer with gelatin and water in it to medium speed and slowly add hot mixture. When all of the hot mixture is added, whisk on high for 10-15 minutes or until it forms a stiff cream like consistency of marshmallow cream. It should form soft peaks. Add any flavor ingredients for the last 2 minutes of mixing. Grease a 9x13in pan. Pour marshmallows into greased pan and smooth evenly. Let rest at least 4 hours (overnight is best). Cut with a well-greased pizza cutter. Store in an airtight container for up to 3 weeks on the countertop (do not refrigerate. Marshmallows will melt in the refrigerator).
Optional: add 3 Tbs of cocoa powder to make chocolate marshmallows or sprinkle with cinnamon
