Nomato Salsa/Sauce
4 large carrots
1/2 can beets or 2-3 fresh beets
1/2 onion
1/2 to 1 poblano pepper
2 jalapenos
1/4 cup apple cider vinegar
2 tsp salt
2 tsp oregano
2 tsp cayenne (or less if you don't like spicy)
1/2 Tbsp smoked paprika
1/3 cup water
Steam carrots and beets together until they are soft. Puree together. Saute onions and peppers. Mix carrot and beet sauce with sauteed veggies. Add seasonings, vinegar, and water and mix until it is the consistency you like. Enjoy with raw carrots, chips, or anything you like!
