Allergy Friendly Plantain Flour Muffins (gluten free, dairy free, egg free)

4 medium bananas (or 1 cup of unsweetened apple sauce)

1/2 cup of water (may need less, add slowly)

2 Tbs olive oil

3 Tbs maple syrup (or honey) https://amzn.to/3lYhuk1

½ tsp salt

2 tsp baking soda

3-4 Tbs vinegar

1 tsp vanilla

¼ cup maple sugar (or coconut sugar, cane sugar, stevia ect. Adjust amounts depending on what sweetener you use) https://amzn.to/3m1DF8Y

1 Tbs of psyllium husk mixed with ½ cup of water (let sit for 5 minutes) https://amzn.to/41n2z2W

Optional- ½ cup Raisins, ½ cup chocolate chips, ½ cup blueberries, 1 Tbs cinnamon, or 2 Tbs coco powder

Mash bananas. Mix wet ingredients (except vinegar-add this last) together and then add in dry ingredients. Bake on 350F for about 20 minutes
