Rice Flour Muffins (gluten free, egg free, dairy free)
2 Cups of Bob’s 1:1 flour mix https://amzn.to/3ZAV9HZ
1 Tbs baking soda
2 prepackaged cups of unsweetened applesauce
2 Tbs maple syrup (or honey) https://amzn.to/3IwpqQW
Pinch of salt
2 Tbs oil
1 cup of water (1- 11/2 cup)
3 Tbs vinegar
1 Tbs psyllium husk https://amzn.to/3YWYxg1
Optional- cinnamon, coco powder, chocolate chips, blueberries ect.
Mix dry ingredients together. Put psyllium husk into ½ cup of water and let sit until it becomes thick. Add in wet ingredients (except vinegar-add vinegar very last). Once mixed until smooth, add vinegar and mix. Pour in muffin tin and cook on 350F for about 20 minutes. This makes about 24 muffins.
